Makes 13 portions
Storage: Keep in a large airtight jar for up to 4 weeks
- Zest 1 orange
- 500g rolled oats
- 100g cashews
- 50g dried dates, chopped
- 50g raisins
- 50g desiccated coconut
- 1 tsp cinnamon
- 6 tbsp runny honey
- 100ml rapeseed oil
Preheat the oven to 160C/Gas 3.
Grate the orange zest into a large bowl before adding the oats. Roughly chop the cashews and dates and add them to the bowl along with the raisins, desiccated coconut and cinnamon.
Spoon in the honey and oil and stir well, combining all the ingredients together until all the oats are coated.
Tip the granola onto two baking sheets and spread out evenly no thicker than 2 cm. Bake for 15 minutes before removing the granola from the oven and turning with a fork. Return to the oven and bake for a further 10 – 15 minutes until the oats and nuts are golden, then leave to cool.
When the granola is cool enough to touch, squeeze the oats together with clean hands to form clusters before allowing to fully cool. Decant into a large sterilised jar and keep for up to 4 weeks.
Serve with some low fat, high protein Greek yoghurt or low fat milk (note: milk or yoghurt is not included in nutritional information below)
