Quick and easy evening meal (30 minutes). Serves x2 people
Ingredients:
- 3 chicken breasts (diced)
- 2 tbsp tikka powder (add a 3rd for more spice)
- 2 tbsp greek or coconut yoghurt
- 2 garlic cloves (chopped)
- 1 fresh chilli
- 1 red onion
- 1 pepper (colour of your choice)
- Optional punnet of mushrooms
- x2 tbsp of tomato puree
- 1 tsp coconut oil or olive oil
- Optional chopped coriander and slice of lime for garnishing
How to cook:
- If you have time beforehand – marinade the chicken with the tikka powder for as long as you can
- In a pan, add the coconut oil until it has melted on a high heat
- Add the chopped onion and reduce to a medium heat and cook for a couple of minutes until soft
- Add the chicken and cook until it is sealed/white
- Add in the chopped garlic, chilli and pepper and cook for a few minutes
- Add optional mushrooms and keep stirring
- Add greek yoghurt and tomato puree
- You can add 50ml of water to reduce the thickness of the sauce if needed
- Start to cook your rice/warm pitta/flat bread
- Simmer for a further 10 minutes until everything is cooked and full of flavour
Serve topped with chopped coriander and a squeeze of lime juice alongside brown rice or your choice of a flat bread/pitta bread or over a jacket potato
