Makes 10 x 30g balls

Storage: Store in an airtight container, for up to 7 days

Ingredients:

150g cashews
75g rolled oats
2 tbsp (42g) honey
1 tsp cinnamon
40g dark chocolate (70-84%) chips or cocoa nibs

Methods:

  1. Place all the ingredients, minus the chocolate chips in a food processor and blend until a smooth dough is achieved.
  2. Tip into a bowl along with the chocolate chips, and using clean hands, knead the chocolate into the dough. Divide the mixture into 8 and using the palm of your hands, roll into smooth balls.
  3. Place on a lined baking sheet and put in the fridge for 20 minutes to firm up. Remove from the fridge and transfer to an air-tight container.
