New York style pancakes! A tempting but healthy treat for the whole family on a lazy Sunday morning!

Makes 4 pancakes

Ingredients: 

  • 3 eggs
  • 3 heaped tbsp (120g) cottage cheese
  • 40g rolled oats
  • 1 tsp (3.5g)  coconut oil, melted
  • ½ tsp baking powder
  • 2 rashers lean bacon (60g)
  • 2 tsp Maple syrup (13g)

Instructions:

Place the eggs, cottage cheese, baking powder and oats in a food processor, and blend to create a smooth, thick batter.

Cook the bacon under a high grill for 2 – 3 minutes either side until crispy.

In the meantime, heat a little oil in a non-stick pan and spoon in the batter to form 4 thick pancakes.  Fry the pancakes for 2 minutes, flipping the pancake when bubbles appear on the surface of the pancake.  Cook for a further 1 minute on the other side.

Stack the pancakes and top with the crispy bacon and a drizzle of maple syrup.

Optional Toppings: 

Top your pancakes with almond butter and banana, fresh berries and Greek yoghurt or poached egg and asparagus.
