Makes 12 large balls, 24 mini bites

Ingredients: 

  • 100g nuts (walnuts/almonds/cashews)
  • 100g desiccated coconut
  • 50g goji berries
  • 50g rolled oats
  • 100g dried apricots
  • 2 tbsp honey
  • Pinch of salt

Methods:

First, gently toast the nuts and desiccated coconut in a dry frying pan for a couple of minutes – allow to cool before proceeding.

Place the toasted nuts along with all the other ingredients in a food processor and blend until the mixture starts to form a ball.  Tip the mixture into a bowl and bring together with your hands.  Form the mixture into bite-size balls and finish by rolling in more desiccated coconut.

Place the balls on a lined baking tray and place in the fridge for 30 minutes to firm up.  Once firm, store in a airtight container for up to 1 week.
